Today, he is one of the leading figures in Normandy’s culinary scene. His MOF title, his consistency, and his commitment to fine cuisine based on quality ingredients make Pierre Caillet a recognized and highly regarded ambassador. Just a few minutes from Fécamp and the sea, the chef draws inspiration from the seasons, working with premium fish and seasonal ideas: tomatoes and fennel as a vegetable starter, lobster with zucchini, tagetes, and raspberries; John Dory with artichokes, chanterelles, and elderberry; rhubarb and woodruff in the exquisite Calville menu at €108 for five courses, which can be arranged into three courses for €75.
