In the heart of Salers country, a splendid period stone house, which justifies its reputation as much for its fine hotel facilities as for the chef's dishes, bourgeois and undeniably technical. The seasonal menu is wide-ranging, reproducing the great classics with a modern twist: a dozen snails from the Sion farm, Arctic char with Noilly-Prat sauce, spinach shoots and rattes, a chevreau de lait with sorrel and chanterelles, a traditional crème brûlée with bourbon vanilla.
