For his part, it's the Catalan terroir that he's adopted, to produce this variegated cuisine, always precise and charming, through his two menus, the €36 lunch menu, with a slate that changes according to the market, and a hidden menu at €55 in the evening. Naturally, the wines of the appellation are given pride of place.
