A devoted champion of his region and a unique, endearing figure, Xavier Mathieu holds a special place in the Luberon landscape. First, because he is now the only “sustainable” chef who has been based in Joucas for thirty years and has held three toques since 2007—while all the others from that era have since closed their doors. Proof that this profession requires identity, passion, and tenacity—all virtues cultivated by the chef in his luxurious Provençal farmhouse, featuring fine materials like marble, wood, and stone, to complement a cuisine shaped by its surroundings and refined over the years. You simply must try his take on pistou soup, the Provençal “raîte” with cod and yellowtail, the leg of lamb cooked in garrigue sand, split peas and white beans, the Avignon-style beef stew, and the honey dessert—a mead soufflé with lavender honey ice cream. The service is both precise and welcoming, the wine cellar boasts an excellent selection of southern wines, and the menu is priced at 145 €.
