Gourmet Restaurant It's a magical place, just a few minutes from Montpellier, a 4* hotel set in a magnificent 18th-century folly, elegant and luxurious. The estate is home to Mathieu Garcin's gastronomic cuisine, which pays careful attention to product sourcing and respect for the seasons, unveiling a regional and contemporary menu. Highlights include cep cannelloni with laguiole cheese and yellow wine emulsion, scallops with semi-salted butter, chard with lead pellets and pine nuts, pistachio beurre blanc, gremolata of veal steak from Aveyron and Ségala, caramelized cauliflower purée and melting apples, and a dessert of chocolate, buckwheat and whisky. Menus from €30 to €65.
