It's as much a culinary experience as it is a true moment of fulfillment, a family-run hotel in the heart of the Cévennes, where you feel close to nature and far from the stress of the city. The tone is simple, straightforward and authentic, leading to unpretentious seasonal cuisine that goes perfectly with the moment. The €53 menu is right up there, with carpaccio of calf's head, lightly spiced tomato sauce, fried capers and gherkins, garlic cream panade, rice pilaf with vegetables and mousse of Hyelzas ewe's milk cheese, a filet of Aubrac and summer truffle condiments, seasonal vegetables and small potatoes. Classic desserts.
