Gourmet Restaurant A pioneer of bistronomy in Touraine, this Deuvalière, already in its twenties, stays the course and retains its place at the top of the bill, offering a plate each season that never changes in spirit. Home-grown produce is interwoven with well-founded fusion reflections, from autumn mushrooms japanized with an egg yolk confit in soy sauce, light porcini mousse, bonito shavings and capers, to flat-cooked lean back with textured carrots, twisted with cumin beurre blanc and olive oil crackers, a Thai version of duck breast with roasted pineapple in a pistachio, cashew and peanut crust, mango condiment and coconut-satay sauce with red curry, a return to France with snacked scallops, Jerusalem artichoke purée with foie gras and crunchy Jerusalem artichokes with walnuts, creamy yellow wine emulsion. Lunch menu €28.
