Chef's Restaurant
Facing the Bay of Arcachon, the Hôtel Les Vagues restaurant combines an exceptional setting with sincere cuisine. In a room bathed in natural light, chef Gaël Derrien creates a short, precise menu, faithful to the seasons and local produce. The "œuf façon meurette au lard paysan" is seductive in its depth, the "magret des Landes rosé sur embeurré de chou et carottes croustillantes" confirms a fine technical mastery, and the "fraîcheur au citron vert, sans sucre ajouté" closes the meal with a disarming purity. The well-constructed wine list is supported by a passionate sommelier who takes the initiative of returning to the dining room to show you his favorite wines. A rare gesture that turns a good meal into a memory.
