Chef's Restaurant On the heights of Lake Geneva, in the village of Lucinges overlooking the Genevois region, this address offers two very distinct entities. The Bistrot de la Madeleine and the latest addition, the gastro Auberge. After a few months of reflection, Pierre Lelièvre (who has since left the adventure for personal reasons) and Benjamin Breton have just opened an astonishing and detonating table. And it begins with a bang. The pea, jelly and pod is a very refreshing proposition. This is followed by a declination of beautiful tomatoes, carefully crafted and blended with iodized flavors. Just after red, the "fire turns green" with this elegant watercress and oxalis coulis. These tangy flavors are the perfect accompaniment to this pike quenelle in a zucchini flower. Then the cristivomer trout caught in Lake Annecy melts in your mouth. Its flavor is enhanced by meadowsweet and a purée (a little too sweet) of fermented carrots. The chef reminds us that he's just 30 years old by offering a gourmet, regressive "wink" with these crayfish like a lobster roll. Surprising! After these colorful tableaux, he moves on to more monochromatic dishes: summer venison rib, juniper berries and venison sausage. And, right next door, "like a parmentier", a delightful venison effiloché, potatoes and coffee. The show isn't over yet. After a comforting pre-dessert (pancake topped with miso caramel), we applaud the ice cream with raw milk, preserved blackcurrant, juniper oil and fir bud. To finish, a 70% chocolate and smoked black olive oil will convince us of a totally mastered score. The wine list is already very accomplished, as is the service. Before you leave, don't forget to say hello to "Bob", the yeast, who slumbers between two tables. It seems that fermentations will be at the heart of the next adventures of this explosive duo, between France and Switzerland.
