Chef's Restaurant Jean-Pierre Vullin is a master, and not just a Master Chef. He knows and understands his Bresse better than his own pocket, and his auberge brings together all the good things that the terroir has to offer: respect for the product, simple and true flavors, recipes that have endured for decades, even centuries. So the Auberge Bressane is not a lounge bar or a bistro, it's a French table in all its provincial nobility. This is reflected in the fine "Glorieuse de Bresse" menu at €74, with foie gras, smoked trout, frogs, puffed pike quenelle, Bresse poularde with Savagnin cream, not forgetting of course the fromage blanc with Etrez cream..
