Good food in the French tradition of upscale hotel cuisine, as Le Maquis is one of the region's most renowned establishments. Noble products, with a few Corsican flavors to liven things up, in a well-mastered menu: sautéed langoustine tails, eggplant au gratin with tomato concasse, denti white on skin with celery and carrot duo, roast lamb barrel with vegetables à la plaque.
