Chef's Restaurant This generous table is an invitation to return to Frontignan. Admittedly, neither the surroundings nor the place itself are the stuff of dreams, but the good vibes, the quality of the welcome and the generous cuisine provide all the satisfaction hoped for. The chef immerses us in his world, his recipes and his dynamism, with skilful, well-composed menus offering excellent value for money: salmon gravlax with leek sprouts and fennel marinated, low-temperature egg, mushroom tartar with meurette emulsion, Mediterranean monkfish with beet cream, cooked to a golden brown with supple flesh, melting beef chuck with a creamy sauce (featuring, as with the monkfish, vegetables from the Fabrègues market garden), chocolate soufflé with vanilla and yuzu cream. Well-stocked wine list, more limited selection by the glass.
