Chef's Restaurant Hugo is the first name of Tomy Gousset's eldest son. Ten years ago, he shook up the bistro cuisine scene with his Tomy&Co and Marso&Co. Today, he's more discreet, as the media and influencers have turned their attention to other novelties, but his addresses are still worth a detour, not least for their excellent value for money: veal tartare with gribiche sauce, cucumber and mustard seeds, roast skate wing, tomato, peas, sauce vierge and salicorne, raspberry, apricot ice cream, soft cake and Greek yoghurt in a menu for less than 50 euros that, for once, offers you a real choice. Smiling, energetic service, short, well-adapted cellar.
