A faithful hotel tradition and a fine bourgeois restaurant that deserves a mention for a well-organized stay in Languedoc. In this beautiful stone house, well-chosen products and masterful sauces are celebrated: escalopes of foie gras in ginger poultry broth, timbale of macaroni gambas and sot l'y laisse, fillet of sea bass in a white wine sauce with herring roe, roasted veal sweetbreads with cauliflower mousseline, coffee and hazelnut-infused jus, sablé of red fruits with basil diplomat cream.
