We always have high expectations for this lovely restaurant in the heart of Saint-Rémy, which regularly surprises us with new offerings. This year, we were very impressed by the new kitchen team led by Chef Thomas Cavasin: a beautiful balance in the stuffed zucchini blossoms filled with subtly smoked brousse cheese and served with pistachio pesto and basil ice cream; a rare and delicate galère crab on a shellfish-based flan with a bisque made from crab shells and black olives; juicy monkfish of dazzling freshness with a fish soup reduction; Crau veal served with a tomato tartlet in the style of a Bloody Mary, topped with capers and sliced fruit juice. The desserts from the new pastry chef are up to par, and the wine list remains as extensive and well-curated as ever.
