The arrival of young chef Quentin Lailler, who has worked for a number of top chefs and prestigious establishments (Pur with Jean-François Rouquette, Lameloise with Eric Pras, l'Oustau with Glenn Viel) is great news as he takes over from Romain Lorenzon, who is due to embark on a personal project in the coming months. A smooth and promising transition, for an experience we'll be talking about again very soon, as the toques have been retained for the time being.
