Here, the chef works on the region's classics, with just the right amount of technique and produce to hold his own. The €34.50 menu is a good option, with frog legs with garlic butter, American-style monkfish medallion, roast rack of lamb with walnuts and apple tart flambéed in calvados. Service to match.
