Chef's Restaurant A unique place in the heart of the Lozère region, the Domaine de Barres is a luxurious ensemble of an 18th-century château and a 27-hectare park planted with trees, a spa, a golf course and a gourmet restaurant by Thomas Garoux. The latter offers well-executed market cuisine in a rather contemporary style, using fashionable techniques and slightly fusion ideas, for a result that suits: foie gras mi-cuit au cacao amer, rôtie pomme et gelée kaki, tuile dentelle cacao, le retour de criée en sucré salé, filet snacké, velours pomme/céleri, pak choï grillé et amandes, condiment salicorne, filet de canard poêlé, topinambour cuit au sel, navets et rutabaga à la citronnelle et jus échalotes grées, or douceur de chocolat en différentes textures. Friendly staff. Classic cellar.
