At the summit of Mont Cindre, Hôtel Ermitage overlooks Lyon and the Monts d'Or. Its restaurant, La Cuisine- à-Manger, has made the view the centerpiece of its panoramic bay windows. Chef Nicolas Moreau returned to the Lyon region at the end of 2022 after several trips, notably to Réunion Island, which led him to enhance seasonal products in his own way, such as monkfish from the Brittany coast, served with butternut and almond gomasio, all seasoned with a curry and mustard emulsion. The spices are echoed in the pear of our regions, with its speculoos cream and yogurt ice cream. The cooking is just right, the dishes elegant. The wine list highlights the winemakers' respect for the environment, as well as a number of grands crus with the "Carte Collection", and the service is highly efficient.
