It's an elegant farming estate north of the Etang de Thau, where olive oil is produced, and where you can enjoy horseback rides and visits to the cellars of Château Paul Mas. Julien Gonzales' dishes, which are all local and seasonal, are the culmination of a full southern program. The chef is just as at home with the market menu as with the tasting menu, proposing a slate in good rotation and a formula at €69, logically accompanied by wines from the estate.
