Chef's Restaurant
This splendid 18th-century château now houses a 4-star hotel, complete with a spa and a gourmet restaurant. Chef Victor Vrignaud breathes new life into the establishment with modern, intuitive cuisine—both in presentation and concept. The €69 menu features mackerel in a tartlet with raspberries and candied lemon, line-caught fish with a coulis of sweet piquillo peppers and bottarga, dark beer reduction; free-range chicken prepared two ways, with young beets, wild garlic, and poulette sauce; and finally, candied apricot with wakame, tonka bean, and raw cream. Attentive staff.
