The operation is of the same high quality, with a menu compiling current cravings and fashionable ingredients, while personalizing them: grilled octopus nectarine bouchot mussels saffron popcorn emulsion, veal onglet with binchotan and smoked eel ikejime, strawberry vacherin espuma fromage blanc hibiscus jelly sorrel ice cream.
