Local produce is showcased to perfection, with beechwood-smoked Savoy trout and herb cream, flaked wild sea bass with chard embeurré and pike roe, Dombes duck breast with Apicius spices, carrot cream with cumin and winter vegetables, and tiramisu-style pears from Haute-Savoie with amaretto crème montée and whisky coffee caramel.
