Chef's Restaurant
He always has a few magic tricks up his sleeve, along with a warmth and enthusiasm that are contagious. Gilles Choukroun, the bistro owner, is still the same person he was when he ran a gourmet restaurant in Chartres or served his enchanting dishes at the Café des Délices. Today, we enjoy a different kind of culinary delight, one marked by naturalness, sincerity, and cheerfulness: herring with potatoes, celery rémoulade with foie gras, chuck steak in wine with a traditional side dish, veal head à la ravigote, and the delicious profiteroles “from my childhood.” Follow the suggestions on the chalkboard and the well-curated wine list.
