This former schoolhouse in the Parc des Cévennes overlooks the valley and offers a breathtaking view from the terrace. Romain and Suzanne bring to life a fine regional cuisine, as interesting in its presentation as in its substance, in a seasonal menu at €42, where you'll discover some rather sophisticated ideas, Vaunage snails in walnut wine, Valestalière watercress coulis, flame-burnt leeks and oil infused with leek green, a fish quenelle, Dubarry cream, cauliflower tabbouleh, arugula pistou and anchoïade foam, a Montoulieu duck breast, root purée with hazelnut butter, parsnips glazed to brown, Cévennes sweet onion petals and pearl duck jus, a declination around lemon and violet, semolina cake with white violet, Corsican lemon cream, lemon-violet sorbet, crystallized white flowers and meringue slivers.
