La Charme is a history, a project, and still a destination for the people of Dijon. David Le Compte and Nicolas Isnard have made it an important base for their development. While the former is still at the helm, the latter honors a number of contracts around the world, mostly in Asia and the Middle East. The company still has a lot going for it, even if its ambitions, and its wingspan, have been somewhat reduced over the years. In terms of service, which is nevertheless solidly supervised by Cécile, overall service, choice of products and breadth of offer (open three days, no à la carte menu, not too expensive menus), the three toques are just about maintained, thanks mainly to the intrinsic qualities of the chef, those we know him for, a very good saucier, always precise in his cooking and accompaniments. The promise of a culinary voyage (Colombia, Morocco, Vietnam...) seems a little superfluous, but the content is pleasant: cucumber avocado leche de tigre, then butternut cod on a very good sweet spice sauce before a quality pigeon with sweet and sour sauce and vinegared rice and good desserts (cardamom grapefruit choco, reinterpreted tatin, hazelnut trompe l'oeil...). Great Burgundy cellar full of fine references (but not easy to choose from since you don't know anything about the meal...).
