Gourmet Restaurant An Englishman settling in the English Channel? No surprise there. Edward Delling-Williams, who cut his teeth in some fine establishments on the other side of the Channel before opening Le Grand Bain (Paris 20th), has fallen in love with this corner of Normandy, which reminds him so much of the landscapes of his childhood. In this charming former presbytery, where we discovered Philippe Hardy (Le Mascaret) a long time ago, he's having the time of his life working on a seasonal cuisine that draws most of its substance from local producers, but also from his own production, he, the gentleman farmer, who at the same time went into farming. Pork rillettes, fried monkfish cheek with squid ink, plaice, kale and miso cream, the plates are joyful and invite sharing, as with this formidable 7-hour lamb shoulder finished on the barbecue. A cutting-edge cellar, built in collaboration with a young wine merchant from Granville.
