Gault&Millau's review 2026

A bit of a hidden nugget, you have to push open the door of this chic boutique-hotel, a few meters from the Saint-Sernin basilica, to discover the small, dapper room, decorated in a pleasant arty style, but lacking a little warmth. The quality of the dishes is surprisingly close to the two toques: foie gras de canard en pastrami condiment chou rouge, saint-jacques cressonnette d'oignon doux haddock tempura à l'encre, quasi de veau pamplemousse bisque de crustacés, with a chocolate yuzu sorbet banana yoghurt dessert that's a little underwhelming. A well-crafted wine list of some thirty wines, with a focus on the South-West and Languedoc, at very affordable prices
