The €55 menu is ambitious, with its perfect egg and chanterelles, cream of mushroom and onion confit, pan-seared scallops, hazelnut risotto and saffron cream, half-lobster and chicken leg ballottine, poached pear and thyme-roasted clementine, almond crumble.
