Chef's Restaurant It's still one of Nîmes' most interesting gastros in its current form. Damien Sanchez's approach and commitment to this singular place, with its sophisticated decor, is evident in his search for associations, carefully crafted presentations and common, seasonal products, preferably selected from the region. Prices have become hefty, on a par with those of the top restaurants in the area, starting at €98 for dinner on dishes that generally avoid prestige ingredients: carrots from the sands in millefeuille perfumed with cumin, an orange sauce, on well-confit Mediterranean whiting, trout from Les Fumades in two ways: sashimi spiced with butternut and crushed, a large stick of butternut confit in olive oil, a fish a little crushed by the butternut and happily awakened by a yuzu lemon pomade. The same finesse is found on the bass served with a bicolored lasagne, bell pepper confit and creamy cauliflower heads, ivory sauce with Mediterranean oyster. The patissier's work on chocolate was excellent, with a gourmet touch: chocolate mousse, hazelnut crunch, melting ganache with two chocolates, cocoa sorbet. Large cellar, also rather expensive, with glasses priced at around €15, attentive and friendly service.
