Roger Vergé's former partner at the Moulin de Mougins for over two decades has had his table firmly planted on the road to Valbonne for the past nineteen years. Daniel Desavie pays homage to his mentor with a simple, generous cuisine that attracts business lunches, as well as local and international customers. Depending on your mood, you can choose between the bistro, with its fortnightly changing slate and 3-course menu at €26, or the gastronomic table, with its attractive 4-course menu at €62. The maître restaurateur works with local produce in classic, well-executed recipes, but which could sometimes be dressed up a little more carefully. Palette of asparagus on brouillade, chiffonnade of truffle-scented Iberian ham, fricassee of local artichokes à la barigoule, roasted lamb chops, mashed potatoes, olive sauce, revisited lemon tart, pink praline ice cream...
