Gourmet Restaurant Déborah and Grégory Dandel (known from Le Toqué de Caumont sur Durance, where the chef was a Jeune Talent) have taken over this charming address in an old quarter alleyway (Matthieu Desmarest's ex-Pollen), and have found a lovely place to express themselves. Menus with no choice, including an evening formula at €60 that requires six courses, showcase a fine palette from the man who worked for Orsi and Pic: scallops with fennel and lemon condiment, gently cooked cod with squash purée and lemongrass emulsion, fillet of French venison with parsnip and cocoa juice with quince condiment, apple caramel cider for dessert.
