Gourmet Restaurant The pretty Tarn village of Fiac is less than an hour from Toulouse, near Lavaur. This 19th-century building with a 3-hectare park once belonged to the clergy, and was bought back and completely restored to create this magnificent setting, complete with spa and balneotherapy center, in 2022. The result is a true haven of peace, a perfect blend of old-world charm and contemporary refinement. To boost its audience, the Renaissance restaurant recruited Julien Marseault, ex-Jeune Talent Gault&Millau, who has worked at Savoy, Château de Sable and recently Partage in Saint-Renan. The beginnings are promising, still a little hesitant in terms of service, but the two toques should arrive quickly on what we tasted, with scallops curry coconut ginger, beef cecina orzo risotto, garlic and thyme jus, maigre de ligne, oyster, beurre blanc fumé, vegetal wok, the best of the meal, pigeon pastilla and foie frais (in search of it) and a strawberry dessert a little chiche. A small menu of 35 references, very precise (appellations, vintages, grape varieties), without much originality, but with an appreciable price range.
