Gourmet Restaurant After a change of hands and an unchanged look, the focus since the beginning has shifted to Italy. If the fundamentals remain, it's also to embellish them with products from the Botte: salmon gravlax with buffalo ricotta, citrus dill and chestnuts, foie gras mi-cuit on a potato rösti with sweet and sour Tropéa onions and a good list of varied pastas, spaghettoni with sea urchins, bottarga and anchovies, ziti à la genovese with beef ragout and parmesan cream. Fish and meat of the moment (truffled puréed lamb mouse the other day), tiramisu for dessert.
