Chef's Restaurant Obviously, the idea of sitting at this huge, vaguely rectangular table at the back of the restaurant may not appeal to everyone. But, beyond this déjà vu concept, this layout provides an opportunity to get to know your neighbors, for example, by replaying the QR code for the wifi connection (the walls are thick, forget 5G!) or, a less futile activity, by commenting on the beautiful plates signed Matan Zaken who, much more than being one of the darlings of the foodosphere, is above all a young chef with a sure technique and often brilliant ideas. His cuisine is a traveler, a jack-of-all-trades, daring to use oysters, geranium, pomegranate and sumac, marrying lobster and Jerusalem artichoke in a beautiful exercise in nuance and gourmandise, or bluffing his audience with a magnificent pear, nettle and yeast dessert with accents hovering between sugar, bitterness and vegetal. The service, dynamic and keeping the right distance, doesn't oversell the moment, and the cellar shows itself curious about the new generation, and also open to the world.
