Chef's Restaurant With a reputation to uphold and the high standing of the capital's best ristoranti, Mori, opposite the Palais Brongniart, offers a hushed atmosphere and traditional, delicate dishes based on top-quality produce: carpaccio with 24-month Parmesan Reggiano, Cavalier Cocco linguine with spider crab and profiteroles with mascarpone cream in the impeccable "CAC 40" formula at €49. You can go more chic and more expensive with the à la carte creations of the moment, vitello tonnaro, tagliatelle with royal langoustines and lemon cardamom sea bass to flirt with or even exceed €100. A good choice of wines by the glass on a menu that explores all the regions of the Botte.
