Gourmet Restaurant Julien Caligo (Pierre Gagnaire's former chef at Le Duende, Nîmes) has set up shop in Calvisson, France, and makes no secret of his ambition to quickly collect awards. In this very (too?) uncluttered setting, he has chosen to impose "carte blanche" menus on his clientele, and to pass on the bitter pill by promising "a culinary adventure" through the mouths of his waiters. For the time being, the emotions fall short of our expectations and the adventure remains limited, the fault of a cuisine that is clearly of a good standard, but still overuses purées and flavors that are too smooth. The desserts (offered in three highly successful variations, one based on coffee, mushroom and hazelnut, the other on bread and orange, and the third on strawberry and olive) are worth two fine toques, which, after some fine-tuning, should soon reward this house that was clearly built for it.
