In this small village northwest of Reims, in the heart of the Champagne region, you'll find this traditional address, with its very local charm, corner house with vintage-style wooden bistro chairs, beautiful use of off-white and refined table settings. The chef revisits the usual dishes in an updated vein, with convincing results, such as crème brûlée with Auvergne blue cheese, grilled bacon and arugula, crispy hake with basil and ratatouille, a skewer of filet mignon marinated in paprika and potatoes with herb cream, and a clafoutis with Hermonville mirabelle plums.
