Gourmet Restaurant Cours Ju" ambience in the musicians' district, young clientele, graffitied storefront, pretty room, small terrace on two sides. Noisy, but the atmosphere is in style. Valentin Raffali, former right-hand man to Harry Cummins, keeps to the spirit of La Mercerie. He rolls out a delightful menu of contemporary tapas adapted to the neighborhood. Anchovies in romesco sauce, radish plate with bottarga butter, yuzu kosho oysters, Caesar salad and Bloody Mary... Don't be afraid! Endlessly creative, like this tuna marinated before its passage on the barbecue, shared by sorrel leaves and sour cream, all softened by nectarine wedges. This is followed by three beautiful whole sardines on skewers, grilled and lacquered with a full-bodied teriyaki sauce with sweet soy and mirin, and a large quenelle of poultry liver, not heavy and bland as we often see, with a little cognac (from Groperrin, please). Alongside, a large gherkin, chives and nice slices of toast. Just the right balance. To finish, a fresh salad of nectarines, meringue and galangal powder that brings a ginger flavor. The service is cool and efficient, as is the glass of white Loire chenin "Les Herbes Folles" from Domaine Clément Baraut. Hélène Morère "tells the story" of her winemakers, Sylvain Bock's Ardéchois, Partida Creus's Catalan white, Laura Aillaud's Luberon red, Marc Barriot's Roussillon "Trouble Fait", Vin des Potes' "Born to Be", Bergerac's "Va te faire boire", and lets you taste the speciality of the menu, one of the many orange wines (white vinified like red wine, with a more pronounced taste due to the presence of tannins).
