Chef's Restaurant Over time, the excellent Alexandre Auger makes his mark in this renowned bastion overlooking the Old Port. He's found his feet (his background, with stints at Alléno and Roches Blanches, allows him to do so) and is slowly making his mark, albeit cautiously. With scallops in a declination of Jerusalem artichoke and truffle foam, filet mignon of veal in a pistachio crust, carrots and salsify with sweet spices and a full-bodied juice, and a dessert with black Madagascar vanilla, he has logically won back the two toques in this restaurant with its unique view of the Old Port. Top-notch service, an adapted wine cellar, also accommodating enough to offer the best values. In spring 2024, Sylvain Touati will be the new chef.
