Below Forcalquier's citadel, in a converted pavilion in the heart of a quiet, residential neighborhood, chef Joël Juglaret works Provencal traditions in good form, with just the right amount of product and technique. The €35 formula is well calibrated, with salmon/avocado tartare, market fish cooked to perfection, 7-hour lamb charlotte, root vegetables and cailletier olive juice. Traditional desserts.
