The famous hotel in the heart of the prefecture is a sure bet for its rigor and vitality, weathering the years with ease. The brasserie side ensures a good price-pleasure ratio, with classic, well-crafted compositions that give a positive idea of local recipes: eggs meurette with champagne, back of cod, quinoa and Chalons black garlic sauce, Angus flank steak, vegetable fricassee and pinot noir sauce, strawberry baba and exotic sorbet.
