Chef's Restaurant A slight loss of steam, which we hope will pass in this good house with a long-standing reputation. The dining room is still decorated with artists' canvases, the staff are friendly and the sommelier passionate. And there's no denying the intrinsic qualities of the cuisine, accomplished and masterful, particularly in the market menu, a surprise at €41, while the other formulas offer seasonal plates, such as white asparagus, vegetable vinaigrette with langoustines, perfumed with aromatic herbs, or golden saint-pierre in escabeche with beluga lentils, citrus and romanesco, before the chef's classic revisited, paris-brest with praliné and cazette de Bourgogne. A wide selection of organic wines from all regions.
