Remarkable Restaurant How could we have lived without this sublime place for three years? Anthony Bonnet, the chef of this institution, and ourselves, have had to wait patiently to reinvest in this Italian-style house in the heart of Vieux Lyon, its nooks and crannies and its magnificent glass-roofed dining room. The chef has remained active and attentive, his cooking as close to the product and producers as ever, and he's back to winning his three toques with ease: Mezenc fine-fat beef with wild melitte followed by floral white asparagus are delicate starters with bold combinations. Fish and meat dishes then alternate: gourmet veal with green Beaujolais cider and spicy herbs gives way to pike-perch with sorrel and peas, followed by a sublime, perfectly melting squab with crunchy, smoky green vegetables. This waltz of dishes culminates in a triptych of desserts both masterful and disconcerting: asparagus, lentil and goat's cheese, followed by a more classic but gourmet strawberry-rhubarb and, to finish the trio, a deeper proposal with Bonnat chocolate and Morello cherry. An extensive wine list at prices as luxurious as the venue.
