Chef's Restaurant In one of the city's most beautiful hotels, the Cour des Loges*****, chef Anthony Bonnet takes advantage of this exceptional historic setting, with its old stone, vaulted ceilings and enchanting seigneurial atmosphere, to offer a fine cuisine of produce, which he doesn't hesitate to revisit here and there to enhance sensations, through textures and alliances. Amid the chandeliers and splendid table settings, vegetables from Abbé Rozier's kitchen garden are caramelized with a tangy juice and roots confit with spruce shoots, while Arctic char is confit with cocoa beans, fresh herb coulis and pike mousseline, in a kombu and mushroom broth, squab is cooked in juniper wood with a fermented plum purée, the legs are confit in verjuice with an onion cooked in woodruff hay. The final sweetness is chocolate, cereal and Mont Lyonnais fruit. A cellar worthy of its pretensions. Logical prices. The restaurant is closed for renovation and will reopen by summer 2024.
