Gourmet Restaurant Good news for this establishment, which this year welcomed Yannick Fauriès to head up the kitchens. A former Gault&Millau Young Talent (he won at Les Remparts, Bazas, in 2013, after a stint at Relais du Bois Saint-Georges, Saintes), he has given a new lease of life to a menu that is still fairly consensual and classic of seaside resorts: melon gaspacho with gin, vitello tonnato with summer truffle (not much taste, but perfectly cooked and sliced meat), duck breast with apricot, apricot confit, lavender and apricot sorbet. A rather short cellar, enthusiastically hosted by the young sommelier, Gwendoline.
