Plates spiritually navigate between alpine and traditional influences, from salmon gravlax, guacamole with yuzu juice, crunchy vegetables and black sesame, to pot-au-feu-style cod back with Colonnata bacon, to the traditional tatin here paired with a génépi sorbet.
