Gourmet Restaurant Youth is at the helm in this pretty, long-established house in the market hall. Solène and Adrien continue the adventure with the same passion, both coming from great houses, to bring distinguished cuisine to the Pays d'Auge in this elegant setting, while keeping an eye on the terroir: haddock white cabbage salad with apple balsamic, turbot cooked in hazelnut butter with salicornes and onions, potato and herb crème montée, calvados soufflé in a beautiful sequence at €67 (adaptable to two, four or five courses). A cellar that's gradually expanding, with a good selection by the glass (including Pabiot's pouilly-fumé).
