Emmanuel Hernandez remains stable on his feet and continues to offer Valenciennes regulars a cuisine centered on his must-haves. Blue lobster, scallops, Musigny-style beef tenderloin or pan-fried sweetbreads remain the house's spearheads, sometimes rivaled by the all-truffle menu or suggestions of the moment such as hunting hare. Trained at the Bocuse institute and having worked in the brigades of Savoy and Lorain, the chef knows good manners, well followed by his wife Géraldine in an elegant and refined dining room. Classic cellar at fair prices.
