In a 3-star hotel on the banks of the Gartempe River, Alban Galpin and his wife run a truly exquisite gourmet restaurant, both in spirit and decor—a spacious dining room with clean lines, ideal for business meals. In this region of fine terroir, the chef pays a memorable tribute to his homeland with compelling reinterpretations: a marbled dish of langoustines, fresh goat cheese, and tart apples; a chowder of skrei cod, scallops, and king prawns; lamb prepared three ways—pan-seared ribs, shoulder rillettes, and fillet tartare with lamb jus; and a chocolate sphere with Guanaja, hazelnuts, and praline.
