Gault&Millau's review 2025

South of Nantes, Olivier and Ludivine continue to keep alive a fine inn tradition. The spirit is contemporary and cheerful, with large glassed-in spaces and sober decor, and masterful dishes based on local produce. The "Inspiration" menu at €41 showcases the chef's creativity, with a cromesquisite of shredded beef and parsley mousseline, Lebanese aioli, low-temperature whiting fillet served with broccoli mousseline and pan-fried cauliflower, hare à la royale Alain Senderens-style, and a dessert featuring black lemon and yuzu lemon. Well-stocked cellar.
