Chef's Restaurant Paul Fabuel, who made his name at L'Échevin in Colmar, has taken over this fine bourgeois restaurant with his wife Elise, offering what he knows best: a fine cuisine of noble products, with no concessions, with fine manners, from conception to presentation, and with some interesting ideas: foie gras lips in gold and sweet wine jelly with mirabelle plums and gingerbread, crab with smoked mayonnaise and baeri caviar, lobster tail on a broth flavored with coffee-spiced Alsace saffron, Vosges squab with sweet potato and fig-grape condiment, toasted oat juice. The plate looks good right through to the beautiful mirabelle girolle dessert, a complete wine cellar for all regions.
